覺得自己衰貪心了...點了迷你極上雞白湯拉麵+炸雞+迷你雞炒飯拉麵少了紫菜和溏心蛋(嗚...真令人心痛呢,現在很少到深水埗用餐的說)咳咳...回到正題和同一集團博多拉麵相比下真的令人非常失望不知是職員煮麵問題還是麵質問題麵是比腍更腍,腍到有點黐牙的感覺希望店家能多注意一下湯底看似較稀但味道濃郁,不俗本人不太愛炸雞,覺得還算有肉汁夠Juicy吧炒飯跟栃木屋差不多一樣,都是飯粒分明(因和枥和屋的蒜醬油炒飯一起吃,當然會覺得有蒜香的較可口喔,不公平且不作評論)不過建議都是正正經經點正常拉麵不要學我點迷你想吃炒飯就請到栃木屋吧.相信麵質過腍的問題店家應該會很快注意到及解決吧希望下次再光臨時能給一個笑吧

東京來的過江龍.主打滋味老火清雞湯的Food Court拉麵麵條屬粗身帶淡蛋味,份量夠多!湯美味但雞叉燒一般.有改善空間但性價比高有特色.不妨一試!Good chicken soup base ramen located in a food court.Interesting thick noodles with a light egg taste.Average chicken char siu and fried chicken.Good value. Worth a try.Tokyo Chicken broth ramen:I was in two minds between trying "Varikote Ramen" or this. Eventually, I decided to save the other one with my wife, who always wanted to try it. So after a tiring week at work, I decided to come to Sham Shui Po for Hinotori ("Bird of Fire"). This shop is from Tokyo and specializes in Chicken broths. It's located in a food court at Dragon Centre.All their ramens practically uses the same broth (other than one with tomato added to the chicken broth and another set set 6, with white miso mixed into the chicken broth.) Other than ramens, they also serve chicken fried rice, gyozas, tonkatsu and tatsuda chicken. Pretty good value generally. They apparently have different discounts each day. When I went, it was $5 dollars off every ramen.   I ordered set No.2 with an extra Tatsuda chicken (HK$14)Noodles:Rather thick. Size is even a bit thicker than Ramen Jo and Ippeian. It's a yellowish, thick, square cut ramen with a bit of egg taste and rather on the soft side. It's beginning look like a Nagasaki "champon" noodle to me! Substantial amount. Rather filling. Not as chewy as I had expected. Not "wow" like Agura but decent. Torihana also uses something similar but those were thinner and chewier.Egg:This was bad. The yoke was sour . I couldn't finish it.I don't know what went wrong with it but this mishap dragged down the points a lot on my scale.Chicken char siu:A bit better than what I had at Tori Hana but still very hard to finish. I found the chicken char siu tough and a bit too salty. Not recommended. I wanted to try their tsukune but somehow chose the wrong combination. Broth:Essentially chicken soup. The chicken broth used the whole chicken and then boiled for 8 hours. The texture is a lot lighter than Torihana or Marutama. If Tori Hana's taste like Korean Sam Gi Tang, then this felt like a Chinese doubleboiled chicken soup!Good! Some fried sesame seeds were added to it. Pretty good for the first half but then became progressively saltier as the salt from the chicken char siu began to spread to the broth. Pity. The chopped negi and spring onions (both average freshness) were fine but did not manage to neutralize or freshen up the broth too much.Not sure whether it's a fair comparison but still: I just tried "DarrieGo" noodle at North Point which also specialised in chicken broth. I find the taste here more flavourful then Darrie. All in all, good broth but getting salty at the end. If you order chicken char siu, I suggest you taking it out of the broth and place it on one side.Tatsuda Chicken:It's a pity since they cut the chicken chunks before frying it. Possible to speed up the cooking time...This sucessfully destroyed the fibres of the chicken and robbed it of all meat juice.It's a real pity as the Tatsuda batter was well done. Light, fluffy with a bit of salt, pepper, shoyu and sesame. As long as they don' t cut the chicken chunks randomly, it could be very good. Service:A one man band. The young chap was very polite. He had to do everything from frying the tatsuda chicken, sorting out the char siu, controlling the temperature of the broths, the timing of the noodles, mixing the chicken fried rice and collecting cash.This might be the reason why the consistency of the products is compromised. Nevertheless, well done. Keep up the good work! Adding a few timers might help immensely. Conclusion: Good chicken broth; Noodles were good. Filling but chewier would be better. Chicken Char Siu was average. Good service. Good value. Need more time (& timers! ) to ensure consistency.As far as chicken broths are concerned, I still prefer the Spicy Negi Chicken broth at Marutame on a good day (they are not consistent enough, with or without timers), then Torihana (CWB Branch) and finally Torihana (TST branch). But the potential of the Bird of Fire is not to be ignored.Rise from the flames, phoenix!

上一次來西九龍,已經是特地來試隱家的那一次,但只是短短幾個月的光景,西九已經再開了其他拉麵店!拉麵,真的有這麼受歡迎嗎?因為工作的關係,這一天下午要到長沙灣深水埗附近工作,想起之前食友提過的博多拉麵可以一試,就趁中午的空檔過來西九尋寶。

有趣的是,一到達八樓food court,第一間看到的拉麵店,也是有博多二字(博多香濃燉雞拉麵)的火之鳥!不虞有詐,也沒想過一個小小的food court會有另一間拉麵店,以為她就是我的目標,就坐下來試試了!這裡餐牌真的很food court,自選套餐配搭,飲品配汽水,完全感受不到應有的拉麵魂,價錢更是大眾化, 老實說,我真的有一刻是想逃走的!要不是食友們說這裡的拉麵性價比高(當然,那是說我誤會了的博多拉麵),可能我已經頭也不回去吃維記/劉森記了!和收銀的店員閒聊幾句,他提供了不少點餐意見,之後就坐下慢慢等待。

這個時候才有空細心一看,發現了營幕餐牌的價錢和收銀的價錢是不一樣的!希望店方快點更正吧!不然人客產生混亂就不好了。

時值午飯時間,但人客卻好像只有我一個,可能大家對food court中的拉麵還沒有很大的信心,以為會是港式拉麵吧?就連我也以為很快可以吃,但邊等待卻邊看到店員認真的為我煮這個拉麵!這數分鐘的煮麵時間,和大部份日本店都差不多,因為煮麵用的時間,在日式拉麵中是很重要的!可見food court也不是馬虎的!終於,我的極上雞叉燒白湯拉麵來了!取麵的時候,店員問我要不要加點黑椒?這樣會更添香味,我當然不會拒絕了。

看看店方的介紹,這雞白湯是以原個雞殼連皮帶骨,八小時熬製而成的,還加入了芝麻,連同最後灑上的黑椒,味道濃而不膩。

其實我覺得有點像出前一丁雞蓉味,當然味道會較為鮮甜了。

說到雞白湯,相信大家一定想起鳥華吧,這裡的湯沒鳥華那麼濁,雞味相對是低了點,卻不代表不濃烈,個人覺得還是不錯的。

叉燒也是以雞肉造的,加入了雞皮卷成圓式的叉燒形狀,再以醬油醃製,吃的時候沒有了普遍雞肉的鞋口通病,而且一碗有五塊叉燒之多,實在沒有挑剔的理由。

值得一提的是極上雞叉燒白湯拉麵和極上雞白湯拉麵就只相差$10,但卻是有五塊叉燒和沒叉燒的分別,所以你應該懂得選擇了吧?和大部份日本過江龍一樣,火之鳥的拉麵也是提供材料做法後,經由在香港的廠商製造。

麵條偏向幼身,有點像小時候吃過的明星生麵,很令人懷念。

不過今天這個麵煮得有點過腍,只不知是麵質本身問題?還是店員煮得過耐了?差點忘了店方另一賣點雞軟骨雞肉丸子,這丸子以雞肉混入了雞軟骨做成,味道是沒問題的,但質感則有點過於鬆散。

不過想深一層,日本一向甚少有像潮式魚蛋般的彈牙,其實只是各地方的口味不同問題吧了。

跟餐可加$22多一客日式餃子,一客五隻的餃子也比我預期的好,餃子沒有因大隻而煎得溶溶爛爛或穿破,味道對辦,吃得很滿足。

看看雜誌,這間總店在日本東京的火之鳥,除了為香港炮製的蕃茄雞湯味之外,遲點還會把日本的白味噌和沾麵引入香港,實在令我滿有期待呢~一麵一餃子,只需$87,這個價錢在其他拉麵能連一碗拉麵都吃不到。

誤打誤撞發現寶藏,這個價錢有這質素份量,真的值得再來和推介給大家呢~

It’s hard to fathom that within the youngsters oriented Dragon Centre alone in Sham Shui Po,there are actually 3 ramen shops all operated by trained Japanese Ramen chefs. Hinotori origins from Tokyo in Japan,it specialises in Chicken Broth Ramen just like the also Japanese imported Torihana. The quality was surprisingly great for a food court setting,it is definitely worth a detour.. From Japan . Sauces for Gyoza or Tuning Ramen . Fried Chicken (竜田揚げ) TatsudaAge fried Chicken $15 for 3 pieces.This was cooked from fresh I noticed and really tasty and moist inside, but not oily externally.I asked for some Mayonnaise dip or Yakisoba dark sauce with it. ~8/10.Chicken Ramen鶏炊き ラーメン – $58Behind the soul of the bowl,is their thick but light chicken broth that is balanced with a vegetables broth.Noodles are of the Medium width Curly Noodles中太ちじれ麺 ,cooked al dente well and the presentation is neat.. Rolled Chicken Chasyu was tender and tasty,but that isn’t the main focus here.On the right,a chicken tsukune is mixed with soft bone cartilages and yuzu which was decadent and melts in the mouth!! Unfortunately this chicken ball cannot be ordered separately, but just coming for this alone is enough an enticement to return back soon.~8/10Waiting for Keanu Reeves to come here soon
