I think most people who have lived overseas will agree that what we miss most about food in Hong Kong are never shark fins or abalone.Usually the food that we yearn for is wontons, fish balls, and dim sum.In the past as soon as I landed in Hong Kong, my vacation would inevitably be filled with these items.Now that I live in Hong Kong, I can take all my time to sample them restaurant by restaurant, and with 余均益 at home, my search for great fish balls began!潮苑 pride themselves with they handmade fish balls (手打魚蛋) and the unique handmade beef patties (手打鮮牛肉餅).Of course as indecisive as I was,I had to include 炸魚片頭 and 魚皮餃 for my takeout order.I did takeout because I wanted to have 余均益 with my fish balls, and my mom makes a killer fish broth with no MSG (which I am not against but rather have less).The staff was extremely courteous and helpful and explained to me what could be kept in the fridge longer (the beef patties) and what needed to be consumed right away (anything fish).So I brought back my bagful of goodies from 潮苑 and created my own 4 treasure noodle soup (四寶河)! The handmade fish balls 手打魚蛋 ($78/ 斤)were definitely the standout of the bunch.They were noticeably bigger in size than usual and the irregular shape was a good indication of being hand made.The fish flavor was quite strong (魚味算濃), a little on the fishy side and not very sweet (有點腥).The balls were denser and coarser than normal, with only a few “air holes” inside (質地較粗糙和實在), but not because it was filled with starch but rather real fish meat. The texture was right in between the really bouncy machined made fish balls (機製超彈牙魚蛋) and the ultra soft (滑溜杭州魚丸). While I usually like the light and fluffy fish balls/cakes (like Japanese hanpen and surimi or Hong Zhu styled fish balls), I found these fish balls to be flavorful and natural in taste and had a good balance of texture in my opinion.炸魚片頭 ($78/ 斤)became pale in comparison.It was more bouncy than the fish balls, but the fish flavor was fairly weak.The fried skin was a bit chewy and diverted the attention from the innards.I found it quite ordinary and just ok.魚皮餃 ($30/ dozen)had very palatable and fresh fillings as the pork wasn’t minced too fine and retained its texture.The dumplings were also sweet and juicy contributed by the bits of fatty pork inside.Unfortunately the skin was too thick and was particularly starchy around the folding area.If the skin was thinner and with more fish flavor, this would have been an outstanding 魚皮餃.I didn’t find the signature item 手打牛肉餅 ($78/ 斤)to be very impressive.The beef flavor was weak, and the patties were too thin to feel any significant bounciness in texture.While it is unique, I found it to be more of a gimmick than a respectable creation.Their chili oil 辣椒油 was not fragrant and not spicy (不香又不辣).This was exactly why the presence of 余均益 came into play.The chili sauce helped to balance the fishiness of the fish ball, and added a zesty umami to the noodles.Overall, I found the 手打魚蛋 to be worth the hype, while the 手打牛肉餅 wasn’t. Next time I probably will try out their 墨魚丸with their fish balls. 笑 for 手打魚蛋

手打魚蛋魚片河 招牌菜手打魚蛋只可用差來形容, 用得招牌來形容希望越大失望越大, 不彈牙不爽口也很敗筆, 但最差在連魚味也沒有, 餘下的只有腥味牛什米 整碗最多的是牛肺, 但口感滑黏的很是怪, 而其他牛什也不見得好, 不過數最敗筆是湯底, 淡而無味, 就算加上檯上的冬菜也沒甚幫助

渣甸街人車交雜,同街唔少簡食的街舖,間間大排長龍(除了小室屋這「騎呢」舖位),別過朋友後到附近入貨,行得累了,心血來潮唔理人多想來吃碗牛肉餅河。

潮式滷水麵店,雖有牛沙瓜供應,但是否新鮮心理有數,香港人出名愛吃魚蛋,每日供求不少的魚蛋,用棍打得切麼?還是老實地要碗墨魚頭、牛肉餅河。

大碗幼身河粉,薄得透光條條粗幼厚薄一樣的機啤河粉,雖然滑卻沒半點米質,一夾就斷,墨魚頭只得幾件,其餘的多半是足鬚,廿幾蚊碗河粉也難免有買豬頭搭豬骨情況出現,幸好墨魚頭新鮮爽口,足鬚吃起來亦彈牙,肯用新鮮貨就是好,牛肉餅是這裡名物,薄薄一片的肉餅,充滿著嚼勁,相信這裡的牛丸亦不錯。

吃了幾年,牛肉餅保持水準,很難得,聞著滷水香,下次會試埋這裡的潮式滷水牛腩。

I went to Wan Chai shop before. It was quite ok. But this shop is SUPER not ok. I ordered beef noodles and my mom ordered 魚蛋 noodles. Beef noodles it is normal not very special but SUPER SALTY. Noodles is not soft but it is ok. (3/10)魚蛋 noodles腐爛的feeling. Cos it was in the water for a long time. No taste at all. Soft. No texture. I told the waiter and I exchanged to have beef ball noodles. (0/10)Beef ball noodles beef ball is very juicy that I like it. Should be same taste as beef cake. It is ok but too oily. (7/10)Overall it is a VERY BAD shop. Please go to Wan Chai shop instead. Drank lots of water after that. Lot of MSG.
